Regenerative Agave Spirits

The world’s first carbon negative mezcal.

Mata de Monte

  • Bringing back an agave spirit style that was prevalent when San Miguel de Allende was one of the most important New Spain commercial hubs for livestock, tools and spirits.

Atzin

  • Salmiana capón expertly crafted by Master Distiller Germán González Gorrochotegui.

We have created and implemented an innovative reforestation system called Agavesse, capable of reversing desertification, while requiring extremely low maintenance and no irrigation.

Regenerative mezcal can reverse climate change, create revenue for farmers, improve livestock health and reinvigorate our biocultural heritage.

By incorporating agaves into the keyline berm system for rainwater harvesting, we have established a symbiotic relationship between plants and water that revitalizes soil health. The contoured berms act as natural sponges, reducing evaporation and redirecting precious water deep into the bedrock.

These majestic plants are also incredible at sequestering carbon from the atmosphere. The pilot program shows the agaves will absorb about 95 tons of CO2 per hectare over the course of 10 years. When including other native plants like mesquite, Spanish oak and nopales, estimated sequestration could reach up to 150 tons per hectare.
